I recently ran into a professor from 10 yrs ago.
He was thinking about quitting because the students apathy was overwhelming.
I mentioned that he was one of the most inspirational teachers I had and suggested to any future college students that his ability to make a class interesting was 'the way' to succeed in any course.
He was flattered and motivated to continue teaching and I hope that you can find something honest to say to your professor about what an impact he/she has had for your.
Write it down and send it, and I guarantee you will give a gift that lasts forever.
P.S. Restaurant gift cards are nice too.
How about a letter opener? (Sometimes called a paper knife) Have just looked on the internet and there are loads to choose from, and in the right price range.
